Recipie: Pollo Al Carbón
I can't live without my "Pollo Al Carbón," which means charcoal-grilled chicken. This is good stuff, people. Here's my personal favorite way to cook fresh organic chicken:
1 whole chicken, cut into quarters
1 teaspoon of sea salt (to taste)
1 teaspoon of fresh ground black pepper
1 teaspoon of garlic powder
1/2 teaspoon of ground annatto seed
1/4 teaspoon of tumeric
1 teaspoon of ground oregano
2 tablespoons of nutritional yeast
2 tablespoons of extra virgin olive oil
the juice of 1 whole bitter orange (an unripened orange) or a tangerine
1 whole lime, juiced
Mix ingredients, let chicken marinate as you warm up the grill.
Grill one side at a time, making sure to not move it around as you cook it. Squeeze more orange juice on your chicken just before you serve it.
Serve to your favorite person under the age of 21. Eat and enjoy!

A couple of shows ago you put the call out for places that serve Pollo Al Carbón. There's a great little place out here where I live. It's called Pollos del Norté, and it's at Pulaski and 49th, just a short walk from the Orange Line. The neighborhood is pretty decent, too.
I know, I know, it's not Lakeview/Andersonville, but it's worth the train ride out to try it. But hurry, the family that owns it has put the restaurant up for sale, and I don't know the story behind that.
There's also one you probably already know of at Broadway and Belmont, but the name escapes me at the moment.

Austin has a GREAT place to buy pollo al carbón - from a truck! It's parked on the side of a filling station on Cameron Road behind Capitol Plaza and has a name: "El Norteño". I wonder how Norteõ's pollo compares to Fausto's. They serve it up with a roasted onion, a delicous jalapeño sauce (which the lady says is made only from blended, boiled jalapeños), a lime, & nicely warmed-up corn tortillas. YUM YUM!

I'm New to FOF and have been listening to the last months P-Cast to catch up with all the FOF Family and I love Cesar. He's HOT and so well informed which makes him Even More Hot.Wish i Lived in Chicago i'ld love to work out with him. I wonder if he dates his own Kind???..

It sounds like Andersonville has a pollo-void that is just begging to be filled...
I think Marc and Fausto should commandeer the KFC on Catalpa (didn't it recently go out of business?), and open a restaurant that serves pollo al carbon. Feast of Poules? (sorry, it's french, but it DOES rhyme!)

Pollo al Carbon, corner of Wabash and Cermak Road, Chicago. Marinated in Fresh Garlic,Rosemary,Spicy blend of Herbs - juicy and tasty to the bone.
Pilav Rice cooked in Fresh Chicken Yakhani... Red Beans with Garlic and
Ginger and it is NOT expensive.
